【摘要】:ThisInternationalStandarddescribesaprocedurefordeterminingwhetheraperceptiblesensorydifferenceorsimilarityexistsbetweensamplesoftwoproducts.Themethodisaforced-choiceprocedure.Themethodisapplicablewhetheradifferenceexistsinasinglesensoryattributeorinseveralattributes.Themethodisstatisticallymoreefficientthantheduo-triotest(describedinISO10399),buthaslimitedusewithproductsthatexhibitstrongcarryoverand/orlingeringflavours.Themethodisapplicableevenwhenthenatureofthedifferenceisunknown[i.e.itdeterminesneitherthesizenorthedirectionofdifferencebetweensamples,noristhereanyindicationoftheattribute(s)responsibleforthedifference].Themethodisapplicableonlyiftheproductsarefairlyhomogeneous.Themethodiseffectivefora)determiningthat—eitheraperceptibledifferenceresults(triangletestingfordifference),or—aperceptibledifferencedoesnotresult(triangletestingforsimilarity)when,forexample,achangeismadeiningredients,processing,packaging,handlingorstorage;b)orforselecting,trainingandmonitoringassessors.
